The peculiarity of Tuscan salami is that the fat part is cut into cubes and added to the lean parts during processing. It is thus obtained a salami wich has the lean part well distinct from the fatty one, and normally is a lot lighter than a lot of salami finely ground both in the lean than in the fatty parts. Delicious, wholesome and made with fresh minced hams.
